ARNE & CARLOS’ favourite pancake recipe

Carlos is back! We hope you enjoyed this week’s video and as promised, here is our favourite pancake recipe. Scroll to the end of this post to watch the video.

 

ARNE & CARLOS’ favourite pancakes:

We have tried many recipes in the past, but this is the best one. The trick is not to add all the milk at once. Add and whisk a little of the milk at a time, for a perfectly smooth batter!

2 eggs

½ tsp salt

1 tbsp sugar

6 dl (2 ½ cups) milk

3 dl (1 ¼ cups) flour

2-3 tbsp melted butter

 

-Add the eggs, salt and sugar into a bowl and whisk until light and fluffy.

-Add the flour and 1/3 of the milk and whisk well. You will now have a very thick batter.

-Continue adding the milk, little by little and whisking as you go, until you have a thin, light, smooth and lump-free batter.

-Melt the butter and stir it into the batter.

-Leave the batter to rest for 30 minutes or one hour.

-Heat a round pan and add a tiny dash of butter to the pan. We like our pancakes super thin in Norway, just as French crêpes so we use approximately 0.75 dl (2 ½ (fluid) ounces) of batter for each pancake, making sure the batter covers the entire bottom of the pan and usually cook them for 30-45 seconds on each side, until golden. 30 knit stitches are approximately 30 seconds, and 30 purl stitches are approximately 45 seconds, in case you are swatching at the same time as Arne likes to do. Add a small dash of butter to the pan after every two pancakes.

Enjoy with either some maple syrup or blueberries and strawberries or Nutella and banana.

    Thank you so much for posting the recipe! My husband and are are delighted in the results! We had them this morning with lingonberry jam and fresh blueberries with a sprinkle of lemon and powdered sugar. So good and easy!
    I look forward to your podcasts every Wednesday and Sunday. I learn, knit, and get to visit a part of the world I will never visit because I hate flying.

    Hungry and giggly, hmm? Thanks for the pancake lesson. I’m on vacation and I think I’ll make some of these tomorrow. Maybe spoon on some raspberry preserves and sprinkle confectionery sugar on top. Nutella sounds good too, but like Carlos, I could be addicted to it.

    So glad Carlos is home from hospital. Exciting to have you back after discovering the Advent ball videos which were a highlight of our Christmas preparations. The pancakes looked delicious even though I was a bit doubtful that they would succeed! We watched after dinner but still felt pancake envy! We went back into a 5 day lockdown today and needed a bit of cheering up. Thank you!

    Glad to see you back Carlos, know being in hospital can be boring even before Covid restrictions. I retired from nursing after 45 years. Live in the middle of the United States and we have been having temps in the 0 to -10 F range and going to get colder this weekend. Knitiing socks with some Pairfect yarn that I got for Christmas. Keep doing your exercises and deep breathe.

    Wonderful to see you both back! I enjoyed the pancake demo with the knitting timer. We make crepes with a very similar batter every Sunday. Our favorite toppings are raspberries grown here at our farm and almond milk vanilla yogurt! Looking forward to hearing more about the past months’ activities on Wednesday.

    My father used to make these for my brother and I, but we called them Swedish Pancakes. He couldn’t make them fast enough for us.

    Firstly I was so pleased to see Carlos home and looking well!😊 Arne I love your style of cooking-from the ‘murdering’ of the eggs to the topped off spoon of sugar, you just make me laugh so much! 😂🤣 It will be Pancake Day here in the UK soon and although this recipe is very similar to mine ( I use 1 egg and veg oil instead of butter and add sugar afterwards) I’m going to try your recipe because the pancakes look delicious 😋 We make a meal of ours, savoury pancakes to start( filled with anything from tuna, mayo and sweetcorn to fried mushrooms or leftover chicken with a white sauce!) and then we have some for dessert too! My daughters like to try different combinations Nutella is a favourite here too but also peanut butter and banana inside and honey drizzled over the top. I like a squeeze of lemon and sprinkling of sugar personally 😋 The problem we seem to encounter is which pan to use! We have a small cast iron one which cooks them quickly but also burns if you’re not careful, or a lightweight non-stick pan which is the perfect size but takes a lot longer to cook. We cook on the Aga which is great most of the time but you really need a heavy pan to get good contact.
    Anyway enough of my rambling!! It’s just brilliant to see you both, back together and I look forward to Wednesdays episode so we can hear all your latest news and capers!! 😂

    Hi: Looks like Carlos is doing really well!
    My mother (English) used to make crepe this way and served with butter, sugar and lemon juice – they were wonderful. In New Zealand they make drop scones (pikelets) mini little pancakes served with butter jam and cream also yummy.
    I had better get cooking thank you for the inspiration!

    I grew up with the same kind of pancakes, Arne, you are doing a wonderful job. While I was watching you, I figured out why the first one is different, the pan is not hot enough. My father could flip the pancakes with the pan, it’s not only in movies. In Canada we call these pancakes Crepes. I really like them with a bit of sugar and lemon juice.

As I watched you make those pancakes, I was brought back to a trip to England so many years ago and the woman I stayed with taught me to make the crepe pancakes. Good bye Aunt Jemima for good.     The pan is not flat because it is warped. High heat and lots of usage can cause that

    So glad Carlos is back! My husband is still in amazement that Carlos didn’t have to pay for his treatment. (We live in the U.S.A)
    I love to watch your videos because you both crack me up. You can bicker, but you are always giving each other positive compliments. Word of advice to Arne, ( Don’t let Carlos know you can really cook, otherwise you will have to cook all the time. My husband cooked all the time until I showed him that I am a really good cook. So Arne, BEWARE!)

    Welcome back, glad you are both doing well. I am loving this recipe and video. Growing up in Chicago Dad made these for us on weekends, usually a Sunday breakfast. We called them Swedish pancakes but they are the same from what I can tell. We spread them with jam, rolled them up and sprinkled them with powdered sugar or just rolled them up and put maple syrup on them. We loved them. Wonderful memories too.

    My joy has returned to my life! I am so happy that Carlos and Arne have once again provided me with such uplifting entertainment and information. My Grandmother was German and made “funakuka” for us. We wrapped ours with grape jelly. Never knew they were actually crepes until I became an adult. I find it fascinating how different cultures have similar foods. We are one people. Welcome back! Love you fellows.

    This was great video. Gave me lots of chuckles. I think it’s wonderful that Arne is learning a bit of cooking so he doesn’t have to eat potato chips for lunch (although sounds good to me). Carlos, you showed great patience — remember, there’s more than one way to crack an egg:) I will use a “pinch” of salt and a “topped” Tablespoon of sugar. I recently bought an induction cooktop and am trying to decide what a good frypan would be for induction. Cast-iron would work but is so heavy. Any suggestions? It is so wonderful to have you two back together and so glad you have regained good health Carlos. Most of us can’t knit/purl as fast as Arne. And … nice close-up of your “ass” Arne — my first great laugh of the day.

    It’s great seeing you back, Carlos! I’m so glad you are doing better. I had Norwegian grandparents and I loved to go visit because Grandma always made what we called “grandpa cakes.” There were six kids in my family so she made a lot of them! At home we had American pancakes.
