GORO (Norwegian Cardamom Crackers)

INGREDIENTS

180 grams butter

2 dl sugar

Three eggs

2 dl cream

2.5 dl potato flour

2.5 dl flour

1/2 tbsp Cardamom

 

METHOD

Whip the egg and sugar until creamy.

Melt the butter and let it cool.

Mix the creamy eggs and butter.

Whip the cream until heavy and add gently to the butter and eggs,

Add the flour, potato flour and cardamom.

Heat up your Goro maker (available on Amazon).

Add 1 tbsp of the batter into each Goro “chamber”.

Remove from the maker and cut the uneven edges with a knife.

Allow to cool down completely on a metal rack.

ARNE’S MOM’s BLEMSNIPPER 

INGREDIENTS

1 cup of cream (Arne says to use an old fashioned coffe cup, because that is what his mother used)

500 grams of margarine (we substituted this with butter, it was a disaster, so don’t do that!)

Enough flour for the dough

A pinch of salt

Sugar for sprinkling

 

METHOD

Pour the cream into a bowl and stor enough flour for a soft dough.

Add the salt.

Cut the margarine into squares and add to the dough.

Work until the dough is crumbly.

On a well floured surface, roll the dough into a 6 mm high rectangle.

Cut the dough into rhomb-shaped cookies and sprinkle with sugar.

Bake at 200C until the tops are covered with golden brown flecks.
