This summer we stumbled across a Sicilian salad called Insalata Pantesca — simple, fresh, and endlessly good. It’s made with potatoes, tomatoes, olives, capers, red onion, and oregano, all dressed in olive oil. We’ve had it almost every day at home, and it’s become our new favourite way to use what the season gives us.
From the first glimpse of Svalbard’s glaciers to midnight sun knitting on deck, we journeyed north into clear skies, polar bear country, and moments we’ll never forget.
We set off from Oslo with more luggage than dignity — and one of us on crutches — bound for Bergen and the start of our knitting cruise to Svalbard, where sunshine, yarn, and slow travel awaited.
